Mexican street food meets black garlic

The concept of filling tortillas with various ingredients has a long history in Mexico. While the exact origins of the taco are somewhat unclear, they can be traced back to ancient Mesoamerican civilization around the 16th century. The word “taco” means a piece of paper or a small tortilla used to wrap around food. Street vendors, known as “taqueros,” set up small stands or carts in markets and busy areas, offering a variety of taco fillings to passersby. These street tacos often featured simple but delicious ingredients like grilled meats, onions, coriander, and salsas.

The mellow balsamic flavour of black garlic cloves add another dimension to the salsa (and tacos). Bringing a complex, savoury element that beautifully complements the tomatoes’ vibrant acidity and the coriander’s freshness.

Garlic and tomatoes are an age-old culinary pairing, cherished for their ability to infuse dishes with depth, aroma, and savoury goodness. This unexpected twist elevates the black garlic salsa from a simple condiment to an unforgettable taste sensation, making it a surprising accompaniment to tacos.

Meals Made Easy miniTop Tips: Pulled Lamb Tacos with Black Garlic Salsa
The ingredient list looks long, but the instructions are short easy. I suggest you have all components in seperate bowls or platters.  Place on the table and let diners build their own tacos. What could be easier than that.
Most supermarkets will have 3 different varieties of Mexican Salsa:- mild, medium and hot.
The heat of the salsa will depend on the variety of chilli you purchase.

What should I put in my tacos?

Traditionally, tacos consist of a protein (shredded pork, lamb or chicken), but as we increasingly seek a less meat-based diet, there is no reason to skip the protein. Re-fried or whole beans can be used as a base or filling instead. Various types of salsas add heat and flavour. Fresh salsas made with tomatoes, onions, chilli, coriander, and lime are popular. Creamy avocado is a favourite taco topping. Shredded cabbage or lettuce can add crunch and freshness.

What’s the difference between a taco and a tortilla?

A tortilla is the flatbread used as the foundation for many Mexican dishes, while a taco is a specific dish that uses a tortilla as the outer shell, typically filled with a variety of ingredients. So, a taco is a type of food that incorporates a tortilla as a key component.

A hard-shell taco is often referred to as a “crispy or crunchy taco”. These types of tacos are made using a tortilla that has been crisped or fried until it becomes rigid and crunchy. In contrast to soft-shell tacos, which use soft and pliable tortillas, crispy or hard-shell tacos provide a different texture and experience.

What are some popular finger foods?

When thinking of simple but meal worthy finger foods go no further than pulled lamb tacos, but the 5 listed below are also worth mentioning:-

  1. Sliders: Miniature rolls or sandwiches with various fillings, perfect for a hand-held meal.
  2. Spring Rolls: Thin rice paper rolls filled with vegetables and or proteins often served with dipping sauces.
  3. Chicken Wings: Whether grilled, baked, or fried, chicken wings offer a flavourful and finger-licking meal.
  4. Bruschetta: Toasted bread topped with a variety of ingredients like tomatoes, basil, and olive oil.
  5. Skewers: Skewers featuring cherry tomatoes, fresh mozzarella, and basil leaves drizzled with balsamic glaze, providing a refreshing and bite-sized meal.

Pulled Lamb Taco with Black Garlic Salsa

It’s a bit of a victory when I manage to keep my family from nibbling on the left-overs of the slow-cooked lamb shoulder. But with the tantalizing prospect of serving up some tacos in just a few days, it becomes a feasible feat. The salsa, a staple in our home, relies on whatever fresh salad ingredients we have in the fridge (or is in season growing in the veggie garden). But I never skips the essential kick of chilli and the alluring allure of black garlic. With so many other components being adaptable, it transforms into a fuss-free dinner that pleases everyone.
