Black garlic, also known as aged garlic is a SUPERFOOD created by fermenting garlic bulbs in an oven for 40 days. A chemical reaction known as a maillard reaction takes place between amino acids and reducing sugars causing the sharp taste and pungent aroma of garlic to be mellowed. The millard reaction is also responsible for black garlic containing double the antioxidants of white garlic.

1. Chicken, Avocado and Black Garlic Wrap

Ingredients

  • 1 large tomato, chopped coarsely
  • 1 medium avocado
  • 1 tbsp Black garlic paste
  • 100 g red onion, chopped coarsely
  • 2 cup cos lettuce, or any veggie you prefer
  • 500 g shredded cooked chicken
  • 8 large flour tortillas

Instructions

  • Combine tomato, avocado, onion, lettuce, black garlic paste and chicken in large bowl.
  • Heat one tortilla in microwave about 20 seconds or until just flexible.
  • Top tortilla with about an eighth of the chicken filling; roll to enclose filling. Repeat with remaining tortillas and chicken filling.

2. Avo & BG Caesar Salad

Ingredients

Salad, you can change or add any veggie you like

  • 1 large cos lettuce
  • 50 g bagel crisps
  • 1 large avocado, sliced thickly
  • 20 g black garlic cloves, chopped finely
  • 2 cups shredded cooked chicken
  • 40 g parmesan cheese flakes

Dressing

  • 1 tbsp lemon juice
  • 1 large anchovy fillet, chopped finely
  • ¾ cup whole egg mayonnaise
  • 1 tbsp finely grated pamesan cheese

Instructions

  • Combine dressing ingredients in a bowl
  • Combine tom lettuce, broken bagel crisps, avocado and chicken in a large bowl.
    Serve drizzled with dressing and sprinkled with cheese.

3. Avocado Sandwich

Ingredients

  • 1 tbsp olive oil
  • 2 large eggs
  • 1 tbsp butter
  • 1 tbsp Black garlic paste
  • 2 slices bread
  • sliced tasty cheese, or change to what you like
  • ½ avocado, sliced
  • salt and ground black pepper to taste

Instructions

  • Heat olive oil and crack eggs into a skillet; Flip and cook egg until done. Transfer eggs to a plate and season with salt and pepper.
  • Toasted bread and spread butter and Black garlic paste onto 1 side of each bread slice.
  • Layer cheese, 1 fried egg, cheese, 1 fried egg, avocado on bread.
