What is Black Garlic and how does it blend with honey in a sweet dish?
Black garlic is a unique and prized ingredient that undergoes a transformative process through fermentation / caramalization. It’s created by slowly cooking the bulbs in an oven for an extended period with controlled heat and humidity. This natural process causing them to turn black and develop a soft, sticky texture. Black garlic has a distinct flavour profile that’s significantly different from fresh garlic, with notes of caramel, molasses, and balsamic vinegar. The taste is rich, sweet yet savoury.
The combination of honey and black garlic can add a unique and delicious twist to a sweet pastry. Honey is a natural sweetener with a distinct floral flavour, while black garlic offers a savoury and slightly sweet taste with hints of caramel and balsamic notes. When these two ingredients are blended, they create a rich and complex flavour profile that can elevate the taste of a pastry. The resulting sweet pastries will have a harmonious balance of flavours that makes a unique and memorable culinary experience.

These delicious pasties can be enjoyed all day long.
Try them for breakfast with some fresh fruit. Adjust the honey if you’d like to cut down on the sweetness and allow the black garlic to shine.

The key to working with puff pastry is not to let it become too soft. Soft puff is difficult to roll, and the butter within the dough begins to melt. (You want that butter not to melt until it hits the high heat of your oven, where it will steam and create all those delicious buttery layers.) The good news is that there is an easy fix if you have left your puff pastry out on the counter too long. Just pop it into the fridge until it is cold and carry on.

Common Questions & Problems
Why did my cinnamon rolls turn out hard?
Be careful of over-baking, it’ll cause them to become dry and hard. Cinnamon rolls should be lightly golden on the outside.
How do you keep cinnamon rolls moist when baking?
Make sure the dough is well-hydrated, If the dough is too dry, it can result in dry and dense cinnamon rolls.
Is it bad to let cinnamon rolls rise too long?
Yeast-based dough needs adequate time to rise, but if left to rise excessively, it can cause the rolls to become overly airy and dry.
How tight should the Cinnamon Scrolls be rolled
Try to aim for a moderately tight roll. Start by spreading the apple filling evenly over the sheet of pastry, leaving a small boarder along the long sides. Begin rolling from one of the long sides. As you roll ensure it is firm but not too tight, or the filling will ooze out the ends. A moderate roll will help create a defined swirl. Avoid rolling too loosely, as it can unravel or the pastry may collapse and become misshapen when cooking.
