Black Garlic Yogurt Salad Dressing

BLACK GARLIC YOGURT for SALAD DRESSING

Salads are a summer essential! But without the right dressing your healthy salad may taste a little flat or boring

Why use yogurt for salad dressing?

Yogurt can be a great ingredient to use in salad dressings for a number of reasons.

Here are some of the benefits in using yogurt for salad dressing

  1. Creaminess: Yogurt can add a creamy texture to salad dressings without the need for mayonnaise or heavy cream, which can be high in fat and calories.
  2. Tanginess: Yogurt has a slightly tangy flavor that can add a nice contrast to the sweetness of fruits or the bitterness of some vegetables.
  3. Health Benefits: Yogurt is a good source of calcium, protein, and probiotics, which are beneficial for gut health and digestion.
  4. Versatility: Yogurt can be used as a base for a variety of dressings, from creamy ranch to tangy vinegarettes, and can be combined with a range of other ingredients, such as herbs, spices, and citrus juices.
  5. Low Fat: Using low-fat or non-fat yogurt in salad dressings can be a great way to reduce the fat content of the dressing, while still maintaining a creamy texture.

Overall, using black garlic yogurt in salad dressings can be a healthy and delicious way to add flavour, colour and creaminess to your salads.

Notes

Vegetables: Red or Purple oak lettuce leaves add a nice colour to this salad. I love the texture of blanched green beans but be sure to refresh in icy cold water to retain their colour and nutritional value.  Sautéed button mushrooms are a great vegetable that will add another texture and a delicious umami savouriness to the salad.
Black Garlic: Pureed black garlic can be used instead of cloves.  Black garlic brings a slightly sweet and tangy flavour to the dressing with a hint of balsamic. The sweetness comes from the natural sugars that are caramelized during the cooking process. Don’t be frightened to increase the number of cloves used if you love this flavour.
Non-vegetarian: If you prefer an non vegetarian option try adding some bacon.  Dice 2 or 3 bacon rashers and gently fry then simply garnish with the almond slithers just before serving.
Dressing: Using half Greek yogurt and half mayonnaise reduces the calories count and adding a good squeeze of lemon juice cuts through the richness of the dressing.
Garnish: With black & white sesame seeds, if available

Black Garlic Benefits

Black Garlic top

Black garlic is a lesser-known ingredient that is quickly gaining popularity in the culinary world. Made by fermenting fresh garlic bulbs at a controlled temperature and humidity, black garlic has a soft, sticky texture and a complex flavour profile that sets it apart from it’s more traditional white counterpart.

Black Garlic bottom

In addition to its unique taste, black garlic has been shown to offer a range of health benefits, such as containing more antioxidants than white garlic and being easier to digest due to its reduced levels of allicin. For a delicious and healthy twist on a classic yogurt salad dressing recipe, incorporating black garlic is a great way to add depth and flavour while also reaping the benefits of this SUPERFOOD ingredient.

Conclusion

We traditionally think of salads as an accompaniment to our Australian summer BBQ’s but there is no reason why these dishes can’t be a meal in themselves. Add a little protein and you have a complete and nutritious meal in no time at all. I love the simplicity of a one dish meal, whether it be served on a platter for guests to help themselves or just arranging directly into individual serving bowls.
