Leafy Salad with Creamy Black Garlic Yogurt Dressing
Equipment
- 1 salad bowl
- 1 sharp knife
- 1 small saucepan to blanche the beans
Ingredients
- 1 cup baby spinach leaves
- 1 cup oak lettuce leaves
- 1 cup rocket leaves
- 100 gms green beans
- 125 gms (tin) sweetcorn
- 125 gms (tin) black beans
- 200 gms cherry tomatoes
- 1 bunch spring onions
- 1 diced avocado
- 40 gms almond slithers
Dressing
- 2 tbspns Greek yogurt
- 2 tblspns whole egg mayonnaise
- 1 tbspn black garlic puree
- 1 tblspn lemon juice
Instructions
- blend black garlic pureee with yogurt, mayonnaise and lemon juice
- wash and drain all 3 types of lettuce leaves
- drain the black beans and rinse
- drain the sweetcorn and rinse
- blanche green beans in boiling water for 2 mins and refresh in icy water
- slice the beans into 3 cm pieces
- half the cherry tomatoes
- thinly slice spring onions
- lightly toast slithered almonds
Assembling the Salad
- place leaves in a wide flat salad bowl
- arrange vegetables over the leaves
- when ready to serve drizzle the dressing over the top
- garnish with slithered almonds
