Notes

Vegetables: Red or Purple oak lettuce leaves add a nice colour to this salad. I love the texture of blanched green beans but be sure to refresh in icy cold water to retain their colour and nutritional value.  Sautéed button mushrooms are a great vegetable that will add another texture and a delicious umami savouriness to the salad.
Black Garlic: Pureed black garlic can be used instead of cloves.  Black garlic brings a slightly sweet and tangy flavour to the dressing with a hint of balsamic. The sweetness comes from the natural sugars that are caramelized during the cooking process. Don't be frightened to increase the number of cloves used if you love this flavour.
Non-vegetarian: If you prefer an non vegetarian option try adding some bacon.  Dice 2 or 3 bacon rashers and gently fry then simply garnish with the almond slithers just before serving.
Dressing: Using half Greek yogurt and half mayonnaise reduces the calories count and adding a good squeeze of lemon juice cuts through the richness of the dressing.
Garnish: With black & white sesame seeds, if available
