Unlocking the Power of Antioxidants: Black Garlic Butter Mushrooms for Health & Flavour

Antioxidants help combat oxidative stress in the body, reducing the risk of chronic diseases.

Both black garlic and mushrooms offer a range of potential health benefits. When combined, they can create a nutritious and flavourful addition to your diet. One of the antioxidants commonly found in both black garlic and swiss brown mushrooms is ergothioneine, which has been studied for its potential health benefits, including its role in protecting cells from oxidative stress and supporting overall well-being.

  1. Black Garlic contains more antioxidants than regular garlic.
  2. Swiss brown mushrooms generally contain higher levels of certain antioxidants than white button mushrooms due to their more mature state.

Understanding Mushrooms (edible fungi) A Journey from Button to Portobello

Mushrooms have held a cherished place as essential ingredients in culinary traditions across the globe for centuries. These remarkable fungi add depth and complexity to dishes with their flavours, textures, and appearances, from the rich Asian broths infused with shiitake mushrooms to the hearty stews of European kitchens enhanced by earthy porcini mushrooms.

In our supermarkets, we often encounter a selection of the most commonly recognized edible mushrooms, such as white buttons, cremini, and portobellos. However, these are only a minute selection of the vast and diverse edible mushroom kingdom.

Swiss brown mushrooms, also known as cremini mushrooms, belong to the Agaricus Bosporus species. This species is the same one that includes white button mushrooms. The difference between white button mushrooms, cremini mushrooms, and portobello mushrooms (another variation) mainly lies in their maturity and appearance rather than their genetic makeup.

White Button Mushrooms: are the youngest and smallest. They have a mild flavour and a firm smooth texture. When allowed to mature, they can become cremini mushrooms or portobello mushrooms.

Cremini Mushrooms (Swiss Browns): are matured white button mushrooms. They are brown and have a slightly deeper flavour and richer texture. They work well with a variety of herbs, spices, and other ingredients, enhancing the overall taste of dishes.

Portobello Mushrooms: are cremini mushrooms that are allowed to grow even further. Portobellos are large and have a distinctive meaty texture. They’re often used as a substantial meat substitute or as a base for stuffing.

  • Save the mushroom stems: Pop them in the roasting pan 1/2 way through the cooking process (with another slice of black garlic butter),  they will only take a few minutes to cook. Or save them for another dish.
  • The mushrooms can be barbequed with the lid down. They take on a toasty and smoky flavour.

What does black garlic butter taste like?

Black Garlic blends with the creamy texture of butter and has a slightly sweet but savoury taste. The sweetness comes from the caramelization of the natural sugars in white garlic when aged during fermentation.

What flavours go well with black garlic?

Black garlic goes well with dishes that have dairy in them, as its complex umami undertones can complement the creamy richness of butter, cheeses and creams. The addition of black garlic butter will further elevate any dish that already benefits from the enhancement of regular butter.

I love the decadence of adding a slice of black garlic butter to many dishes. There is simplicity in preparing a tray of vegetables for roasting, sprinkling with herbs or seasonings, then dollop with black garlic butter. Roast or BBQ them with your choice of protein, and you have a one-cook dish!
