Ingredients

  • 1 cup plain flour
  • 2 tbsp SR flour
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 125 gms tasty cheese
  • 25 gms parmesan cheese
  • 125 gms butter
  • 3 cloves of black garlic finely diced with a wet knife blade
  • 1 tbsp lemon juice

Instructions

  • Place all ingredients into a food processor and combine until well combined.
  • Tip the mixture onto a sheet of baking paper and shape into a long roll. 30-35cm long
  • Wrap in baking paper, then roll again in aluminium foil
  • Refrigerate for a minimum of 3 hours or overnight
  • Cut the roll into 5mm slices and place on baking trays
  • Bake in a moderate oven for 15 minutes or until golden.

Top Tips:

  • The rolled log needs to be refrigerated before baking to chill the butter and, therefore, make a crisper biscuit.
  • Cut the cheese with a very sharp knife or an electric knife into thin slices.
  • As an alternative, you can roll teaspoons of the refrigerated dough into balls and bake.
