Why use Greek yogurt for salad dressing?
Garlic yogurt is a great ingredient in salad dressings for a number of reasons.
- Creaminess: Yogurt can add a creamy texture to salad dressings without the need for mayonnaise or heavy cream, which can be high in fat and calories.
- Tanginess: Yogurt's slightly tangy flavour can add a nice contrast to the sweetness of fruits or the bitterness of some vegetables.
- Health Benefits: Yogurt is a good source of calcium, protein, and probiotics, which are beneficial for gut health and digestion.
- Versatility: Yogurt can be used as a base for a variety of dressings, from creamy ranch to tangy vinegarettes, and can be combined with a range of other ingredients, such as herbs, spices, and citrus juices.
- Low Fat: Using low-fat or non-fat yogurt in salad dressings can be a great way to reduce the dressing's fat content while maintaining a creamy texture.
Overall, using black garlic yogurt in salad dressings can be a healthy & delicious way to add flavour, colour and creaminess to your salads.
Aged Black Garlic Benefits for Gut Health![]() Black garlic is aged slowly at low heat, which transforms its flavour and boosts its benefits. - 1 cup rocket leaves
- 100 gms green beans
- 125 gms (tin) sweetcorn
- 125 gms (tin) black beans
- 200 gms cherry tomatoes
- 1 bunch spring onions
- 1 diced avocado
- 40 gms almond slithers
Dressing
- 2 tbsp Greek yogurt
- 2 tbsp whole egg mayonnaise
- 1 tbsp black garlic puree
- 1 tbsp lemon juice
Instructions
- Blend black garlic puree with yogurt, mayonnaise and lemon juice
- Wash and drain all 3 types of lettuce leaves
- Drain the black beans and rinse
- Drain the sweetcorn and rinse
- Blanche green beans in boiling water for 2 mins and refresh in icy water
- Slice the beans into 3 cm pieces
- Half the cherry tomatoes
- Thinly slice spring onions
- Lightly toast slithered almonds
Assembling the Salad
- Place leaves in a wide, flat salad bowl
- Arrange vegetables over the leaves
- When ready to serve, drizzle the dressing over the top
- Garnish with slithered almonds
Top Tips
- Vegetables: Red or Purple oak lettuce leaves add a nice colour to this salad. I love the texture of blanched green beans, but be sure to refresh in icy cold water to retain their colour and nutritional value. Sautéed button mushrooms are a great vegetable that will add another texture and a delicious umami savouriness to the salad.
- Black Garlic: Pureed black garlic can be used instead of cloves. Black garlic brings a slightly sweet and tangy flavour to the dressing with a hint of balsamic. The sweetness comes from the natural sugars that are caramelized during the cooking process. Don’t be frightened to increase the number of cloves used if you love this flavour.
- Non-vegetarian: If you prefer a non-vegetarian option, try adding some bacon. Dice 2 or 3 bacon rashers and gently fry, then simply garnish with the almond slithers just before serving.
- Dressing: Using half Greek yogurt and half mayonnaise reduces the calorie count, and adding a good squeeze of lemon juice cuts through the richness of the dressing.
- Garnish: With black & white sesame seeds, if available

Black Garlic Yogurt Sauce for Kebabs
Black Garlic vs White Garlic: The Kebab Showdown
Turkish-style kebabs are one of the most delicious ways to enjoy garlic yogurt sauce — and swapping regular garlic for black garlic takes it to the next level. Black garlic adds a deep, sweet, umami flavour that blends beautifully with the creamy yoghurt and spices in kebabs. It’s smoother and less sharp than raw garlic, so it doesn’t overpower the dish. Instead, it adds richness and depth that makes every bite feel a little more special.

Conclusion
We traditionally think of salads as an accompaniment to our Australian summer BBQ, but there is no reason why these dishes can’t be a meal in themselves. Add a little protein, and you have a complete and nutritious meal in no time at all.
I love the simplicity of a one-dish meal, whether it be served on a platter for guests to help themselves or just arranged directly into individual serving bowls.
