Thus resulting in chemical changes that impact its flavour and aroma.

Whilst I would choose poached eggs on a café menu every time, I find them too exacting, time-consuming, and fiddly to make for a family breakfast. I adore that soft and creamy yolk spilling over sourdough toast, and let’s not talk about hollandaise sauce; it’s simply delicious! So, let’s save that as a treat for catching up with friends at your favourite cafe.
My substitute for that treat is to add some silky-smooth smoked salmon to quick and easy scrambled eggs. Black Garlic Scrambled Egg Breakfast Wrap
Ingredients
- 8 eggs
- pinch of salt
- 4 tbsp pouring cream or whole milk
- 2 tbsp butter
- 4 cloves of black garlic, diced with a wet knife
- chives thinly sliced
- ground black pepper
- 200 gms smoked salmon slices
- 4 small wraps
Instructions
- Whisk eggs in a bowl with salt and milk or cream
- Melt 1 tbsp butter in a saute pan
- Chop the remaining butter and add to the whisked eggs
- Pour into a non-stick pan and gently cook on low heat
- As the egg starts to cook on the bottom of the pan, make long sweeps across the pan using a silicone spatula
- Remove from the heat whilst the eggs are still moist
- Add diced black garlic cloves, chopped chives and ground black pepper
- Meanwhile, very lightly warm wraps in the oven or microwave
- Lay slices of smoked salmon over half of each wrap
- Top with scrambled eggs
- Gently fold the wrap in half and serve it hot.
TOP TIPS:
- I work on the ratio of 2 eggs per person and half a tablespoon of cream or milk. Alternatively, 1 1/2 eggs per person may be sufficient if they are extra-large eggs.
- My preference is for cream as it creates beautifully creamy scrambled eggs. Look for long-life cream in the supermarket; you’ll always have it on hand for lazy Sunday morning brekkies.
- Melted butter in the pan is a ‘must’. Avoid being tempted to use oil. An extra knob of butter in the whisked eggs before pouring into the pan also helps to create a creamy texture.
- Smoked salmon adds a salty flavour to the Black garlic scrambled egg wrap; hence, avoid adding too much salt to the whisked eggs.
- Whisking eggs immediately before pouring them into the pan will ensure they are nice and fluffy.
- Low cooking heat is another ‘must’ to allow the eggs to scramble gently. Eggs cooked too quickly will become tough.

Spread some black garlic puree on the wrap before spooning on the eggs and salmon. Or swap the wrap for lightly toasted sourdough bread. Black garlic and sourdough bread are a delicious combination with or without eggs.
Why aren’t my scrambled eggs fluffy?
- Whisk just before cooking: Whisking eggs adds air and volume. However, be careful not to beat over.
- Overcooking: Cooking scrambled eggs for too long or at too high a temperature can cause them to become tough and lose their fluffiness. Eggs continue to cook even after you remove them from the heat due to residual heat in the pan, so it’s essential to take them off the heat just before they’re fully set.
- Lack of Moisture: Adding a small amount of liquid, such as milk or cream, to your scrambled eggs before cooking can help maintain their moisture and fluffiness. The steam generated from the liquid contributes to the light texture.
- Old Eggs: Using older eggs can sometimes lead to less fluffiness, as the proteins in older eggs can weaken, affecting their ability to trap air during cooking. Using fresh eggs can help.
What is the best thing to mix with scrambled eggs?
The possibilities are truly limitless, and as I’ve emphasised in previous recipes, feel free to customise as per your family’s or guests’ preferences. There’s nothing more disheartening than preparing a meal only to have it rejected because of one ingredient someone doesn’t like.
If you’re looking for inspiration, here are a few of my suggestions.
- Fresh herbs: chives, parsley, thyme, or the stronger flavour of tarragon.
- Dried herbs: paprika or a tiny pinch of dried chilli.
- A tasty sauce: Tobacco or Worcestershire or Black Garlic Mayo
- Grated cheese: cheddar or goats.
- Bacon rashes: or diced, cooked in the pan before the eggs.
- Vegetables: Asparagus is delicious with eggs, baby spinach, spring onions, or try some roasted cherry tomatoes.
