Top 3 Benefits of making bread without yeast
Time-Saving:
Making black garlic bread without yeast eliminates the need for proofing and waiting for the dough to rise. This significantly reduces the preparation time, allowing you to enjoy freshly baked bread in a shorter period.
Allergy-Friendly:
Yeast can cause allergic reactions or sensitivities in some individuals. By opting for yeast-free bread, you can accommodate those with yeast allergies or intolerances and still provide them with a delicious bread option.
Experimentation & Versatility:
Making black garlic bread without yeast opens up a world of possibilities for using alternative leavening agents such as baking powder, baking soda, or sourdough starter. This allows you to explore different flavours, textures, and techniques, providing a creative outlet for your baking experiments. You can create unique bread recipes tailored to your preferences and dietary needs.

Why Black Garlic Bread works so well!
The sweet and savory notes of black garlic can complement the natural sweetness of bread dough and add a subtle umami flavor. Additionally, the mellow and earthy flavour of black garlic can help balance out any strong flavours from other ingredients in the bread, such as herbs or spices.
To use black garlic in homemade bread, you can chop it finely and mix it into the dough, or mash it into a paste and spread it onto the surface of the dough before baking. Either way, incorporating black garlic into your bread recipe can elevate the flavour profile and add a unique twist to your homemade bread.

Notes
Black Garlic bread with no yeast is typically a damper-style bread, which is quick and easy to make. If you score the dough into sections before baking, it becomes a pull-apart bread and is incredibly easy to serve.
Top Tips:
- Use butter; don’t be tempted to use margarine. Butter has a delicious nutty flavour when melted. Butter also forms a delicious crust on the bread as it cooks.
- Fresh herbs are best! They are more aromatic than dried herbs. Any herbs can be used, although thyme and particularly rosemary pair well with black garlic. You could also try chives, oregano, or parsley.
- Black garlic adds a sweet, earthy flavour to any homemade bread recipe with no yeast. It gives a depth of flavour that balances well with the tasty cheese.
- Any shape of tin can be used, but heavy-duty is best. I am lucky enough to have inherited a heavy-duty square fruit cake tin from my mother. A bread tin would make a great substitute..

Why is black garlic bread popular
Black garlic bread has become increasingly popular in recent years due to its unique flavour and health benefits. Black garlic is high in antioxidants, which can help to reduce the risk of heart disease, cancer, and other chronic illnesses. Additionally, black garlic has a lower concentration of allicin, which is the compound responsible for the pungent odour of regular garlic. This makes it a great option for those who want to enjoy the health benefits of garlic without the strong smell.
How to Improve Garlic Bread?
Try these combinations of herbs to supercharge the delicious flavour of crusty black garlic bread.
- Rosemary has a strong, fragrant flavour that pairs well with the sweet and savoury taste of black garlic. It adds a fresh herbal aroma to the bread.
