1. Black garlic chilli oil noodles

This is one of my favourites that can be made within 10 minutes! If you don’t have much time, I recommend you use the instant undo noodle and simply soften noodles by covering them with hot water for about 3 minutes. Meanwhile, you can prepare the sauce. Enjoy 🙂

Ingredients

  • Noodle
  • 1 tbsp Black Garlic Puree
  • 1 tsp Chilli powder (or chilli flakes)
  • 1 tbsp Oil
  • Some sesame seeds
  • Some spring onions, finely chopped
  • Some salt and pepper

Instructions

  • Cook the noodles according to the packet instructions. Once cooked, drain and untangle with your fingers and set aside.
  • Put the black garlic puree and chilli powder in a bowl. Heat up the oil and then add it to the bowl.
  • Add the noodles, salt and pepper to the bowl and mix well.
  • Sprinkle sesame seeds and spring onion on top of the noodles. Enjoy.

2. Quick stir-fry tofu noodles

Stir-fry noodles is a quick way to make comforting food within 20 minutes. The best thing about stir-fried noodles is that it’s easy to adjust any veggies you like(or left in the fridge). The secret of this recipe is the sauce. Black garlic puree enhances the flavour and the taste. Plus, the health benefits are amazing!

Ingredients

  • 2 Servings of Noodles
  • 200 g Firm tofu, thinly sliced
  • 100 g Broccolini
  • 1 tbsp Olive oil
  • 1/3 Onion

Sauce

  • 2 tbsp Reduced-sodium soy sauce
  • 2 tbsp Black Garlic Puree
  • 1 tbsp Brown sugar or honey
  • 1 tsp Red GingerPowder
  • 1 tsp Sesame oil

Instructions

  • Mix all the sauce ingredients in a bowl. Set aside.
  • Combine 2 tablespoons of the sauce mixture above with the tofu. Set aside.
  • Cook noodles according to package instructions. Within the last 2 minutes of cooking time, add broccolini. Drain well.
  • Heat olive oil in a wok over medium-high heat. Add onion and cook until caramelised.
  • Add tofu and cook until golden about 2-3 minutes. Stir in the noodles, broccolini and remaining sauce mixture until heated through, about 2 minutes.
  • Garnished with parsley and sesame seeds, if desired. Enjoy!

Vegan Singapore Noodles 

Vegan Singapore Noodles 

This recipe may take a bit more effort than others. But it’s so nutritious and delicious that you should try it!

Ingredients

  • 2 Servings of Noodles (Preferably any thin rice noodles) 
  • 1 tbsp Sesame oil
  • 1/2 Onion, roughly chopped
  • 12 Snow peas
  • 1/2 cup Soy beans or black beans
  • 1/2 Red capsicum, chopped
  • 1 tsp Curry powder
  • 1 tsp Red Ginger Powder
  • 2 tbsp Salt reduced vegetable stock or water

Sauce

  • 1 tbsp Black Garlic Puree
  • 1 tbsp Maple syrup
  • 2 tbsp Soy sauce
  • 1/2 Lemon or lime juice

Instructions

  • Cook the noodles according to package instructions. Drain and set aside.
  • Mix all the sauce ingredients in a small bowl. (adjust to taste). Set aside.
  • Heat a large wok over medium-high heat. Once hot, add 1 tbsp sesame oil and onion. Sauté for 3-4 minutes, stirring frequently, or until onion is soft.
  • Add red capsicum, snow peas, curry powder and red ginger powder. Sauté for 2-3 minutes. (Add the vegetable stock if needed)
  • Add the noodles and the sauce mixture to the wok and mix well. Sauté for 2-3 minutes.
  • Serve with desired toppings. Enjoy!

Peanut butter noodles

This wholesome and nutty dish can absolutely provide the energy you need to get through the busy week!

Ingredients

  • 2 Servings Noodles
  • 1 tbsp Sesame oil
  • 1/2 cup Peanut butter(creamy)
  • 1 tbsp Black Garlic Puree
  • 1 tbsp Soy sauce
  • 1 tbsp Honey or maple syrup 
  • 1/2 tsp Chilli powder or chilli flakes

Instructions

  • Cook noodles according to package instructions. Drain the noodles and save around 2 cups of the cooking water. Set aside.
  • Mix all the sauce ingredients together. And adding 1/3 of cooking noodles water. Adding more water as needed to reach your desired consistency. 
  • Combine the noodles and sauce. Serve with crushed peanuts and spring onion. Enjoy!

  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil

  • 1 tbsp Rice wine vinegar

  • Some spring onions, finely chopped
  • 1 cup Baby spinach

Instructions

  • Cook noodles according to package instructions in a large pot. Once cooked, drain them and set aside.
  • Mix black garlic puree, rice wine vinegar, soy sauce, sesame oil, and red ginger powder in a bowl.
  • Combine the noodles with the sauce and baby spinach.
  • Sprinkle the sesame seeds and spring onion and serve.
