Ingredients
- 6 ripe tomatoes roma toms, if available
- 4 spring onions finely sliced
- 4 cloves black garlic diced with a wet knife
- fresh basil leaves
- 1 tbsp black garlic puree
- salt and pepper
- 1 loaf sliced ciabatta bread or similar crusty bread
Instructions
- dice tomatoes and discard inner seeds, let stand for 5 mins, then drain off any juice
- add sliced spring onions and diced black garlic and mix together
- season with salt and pepper
- add fresh basil leaves
- brush bread slices with a little black garlic oil
- heat griddle pan to very hot, and toast slices on both sides until char lines appear
- top bread with tomato mixture and arrange on the serving board
- blend black garlic puree with a little hot water until pouring consistency and drizzle over bruschetta
- top with a few extra fresh basil leaves and serve
