Black Garlic Bruschetta Recipe

Ingredients

  • 6 ripe tomatoes roma toms, if available
  • 4 spring onions finely sliced
  • 4 cloves black garlic diced with a wet knife
  • fresh basil leaves
  • 1 tbsp black garlic puree
  • salt and pepper
  • 1 loaf sliced ciabatta bread or similar crusty bread

Instructions

  • dice tomatoes and discard inner seeds, let stand for 5 mins, then drain off any juice
  • add sliced spring onions and diced black garlic and mix together
  • season with salt and pepper
  • add fresh basil leaves
  • brush bread slices with a little black garlic oil
  • heat griddle pan to very hot, and toast slices on both sides until char lines appear
  • top bread with tomato mixture and arrange on the serving board
  • blend black garlic puree with a little hot water until pouring consistency and drizzle over bruschetta
  • top with a few extra fresh basil leaves and serve

TOP TIPS:

  • It's important to drain away as much tomato juice as possible.  Too much juice will make the bread become soggy.
  • Substitute finely diced red onion for spring onions if desired.
  • If you don’t have a griddle pan, grill or toast bread in the oven until crunchy.
  • Alternative: lightly sautéing sliced white mushrooms, then arrange on bruschetta bread. Top it off with the delightful mixture of tomato, basil, and garlic, resulting in a scrumptious dish of creamy garlic mushrooms on bruschetta.
