Noodles (Prefer any rice thin noodles)

Salt reduced vegetable stock or water
Sauce

Instructions
Cook the noddles according to package instructions. Drain and set aside.
Mix all the sauce ingredients in a small bowl. (adjust to taste). Set aside.
Heat a large wok over medium-high heat. Once hot, add 1 tbsp sesame oil and onion. Sauté for 3-4 minutes, stirring frequently, or until onion is soft.
Add red capsicum, snow peas, curry powder and red ginger powder. Sauté for 2-3 minutes. (Add the vegatable stock if needed)
Add the noddles and the sauce mixture to the wok and mix well. Sauté for 2-3 minutes.
Serve with desired toppings. Enjoy!
