Vegan Singapore Noodles

Ingredients

  • 2 Servings Noodles (Prefer any rice thin noodles) 
  • 1 tbsp Sesame oil
  • 1/2 Onion, roughly chopped
  • 12 Snow peas
  • 1/2 cup Soy beans or black beans
  • 1/2 Red capsicum, chopped
  • 1 tsp Curry powder
  • 1 tsp Red ginger powder
  • 2 tbsp Salt reduced vegetable stock or water

Sauce

Instructions

  • Cook the noddles according to package instructions. Drain and set aside.
  • Mix all the sauce ingredients in a small bowl. (adjust to taste). Set aside.
  • Heat a large wok over medium-high heat. Once hot, add 1 tbsp sesame oil and onion. Sauté for 3-4 minutes, stirring frequently, or until onion is soft.
  • Add red capsicum, snow peas, curry powder and red ginger powder. Sauté for 2-3 minutes. (Add the vegatable stock if needed)
  • Add the noddles and the sauce mixture to the wok and mix well. Sauté for 2-3 minutes.
  • Serve with desired toppings. Enjoy!
