BLACK GARLIC BREAD without YEAST | garlic bread homemade

Equipment

  • 1 mixing bowl
  • 1 baking tin 20cm x 20 cm square
  • 1 cheese grater
  • 1 sharp knife
  • 1 wooden serving board

Ingredients

  • 125 gms butter
  • 2 1/2 cups SR flour
  • 1 teaspn salt
  • 1 tbspn sugar
  • 100 gms grated tasty cheese
  • 4 cloves black garlic finely slice (on wet chopping board)
  • 2 tbspn fresh thyme leaves
  • 2 tbspn fresh rosemary finely chopped leaves only
  • 1 cup milk

Instructions

  • place butter into baking tin, and heat in oven until just melted
  • mix all dry ingredients and herbs together in mixing bowl
  • make a well in the centre and pour in milk, then mix together to form a sticky dough
  • place dough into baking tin on top of melted butter and push into corners to cover the bottom of baking tin.
  • score with a knife into 16 sections (4 x 4)
  • bake 180C for 30 mins or until golden and crusty on the top
  • turn on cake rack to cool slightly then serve on a chopping board

Notes

Black Garlic bread with no yeast is typically a damper style bread which is quick and easy to make.  If you score the dough into sections before baking, it becomes a pull-apart bread and incredibly easy to serve. 
Top Tips: -
  • Use butter, don’t be tempted to use margarine.  Butter has a delicious nutty flavour when melted.  Butter also forms a delicious crust on the bread as it cooks.
  • Fresh herbs are best!  They are more aromatic than dried herbs.  Any herbs can be used although thyme and particularly rosemary pair well with black garlic.  You could also try chives, oregano, or parsley. 
  • Black garlic adds a sweet earthy flavour to a any homemade bread recipe with no yeast.  It gives a depth of flavour that balances well with the tasty cheese.
  • Any shape tin can be used, but heavy duty is best.  I am lucky enough to have inherited a heavy-duty square fruit cake tin from my mother.  A bread tin would make a great substitute..
